Meet The Chef

Shawn C. Watkins is an accomplished chef who has traveled around the world gaining a unique knowledge of people, places and culinary arts. Originally from Austin, he entered the Texas Culinary Academy in 2002, where he learned the skills of “Le Cordon Bleu”, the French method of cooking.  His skills were honed and sharpened by masters such as Chef Scott Cohen, Executive Chef of Las Canarias, Wayne Brooks, Executive Sous Chef of Las Canarias and Isaac Cantu, Chef de Cuisine at Pesca on the River.

Shawn decided to leave his home state and country, for a once in a lifetime opportunity to travel abroad throughout Europe and  further perfect his skills and abilities in the kitchen.  There, under the guidance of Chef Thomas Riedel, he sailed and worked as Entremétier for 7 months along the Rhine river between the Netherlands and Switzerland.  After his work was completed he crossed the pond and traveled back to his native Texas, settling into the coastal area of Matagorda.
